Sumac is a shrub that grows wild in the Middle East.  The berries which are harvested before maturity and dried give a lemony, uplifting flavour to Mediterranean and Middle Eastern dishes.  Sumac can be added to yoghurt dips and hummus, mixed into couscous dishes and sprinked on chicken kebabs.  Some people even use it as a table condiment to replace salt.
