Liquorice root powder has a gentle, slightly sweet yet salty flavour that is reminiscent of Aniseed and Fennel.  Whilst it can be used in both sweet and savoury cooking its characteristic smell is often associated with confectionery.  
Use it in ice cream, custard, pastries and even Crème Brulee.  In savoury cooking, it works well in Indian cooking to intensify Fennel and Aniseed flavours and makes a great addition to shellfish, scallops, fish fillets, squid, chicken breasts and veal.
