Also known as Balinese or Bengal Pepper, Long Pepper looks like a small thin catkin.  Grown mainly in India and the Indonesian island of Java, the tiny fruit comes from the long, cone-like flower spike grown on the flowering vine.  Harvested green, the long berries are then dried in the sun or in the oven.
Originally used in Medieval cooking, Long Pepper is one of the first spices to have reached Europe.  Although it’s got that same peppery bite as other peppers, this spicy yet slightly sweet pepper has an earthy heat with a taste can be compared to the  spice blend Garam Masala thanks to the subtle notes of Ginger, Cardamom, Cinnamon and Nutmeg.
Used whole, crushed or ground in a mill, this pepper works well in Indian or southeast Asian dishes, soups, stews, savoury pastries, pickles and meat marinades.
