Cayenne flakes are a must have if you want to spice up your cooking!  Much hotter than Paprika, a pinch will do to give any dish a kick.  It is typically used in South American dishes, Creole cooking, especially hot sauces from the Louisiana region and Asian and Indian recipes too.
